Cabbage soup...yuck you say?? Well, not this one! I modified this from a recipe on the Food Network. - 1 large, sweet onion
- 2 cloves of garlic, minced
- 1/4 cup balsamic vinegar
- 2 Tbsp brown SugarTwin
- 8 cups finely sliced red cabbage
- 1 can nsa diced tomatoes
- 6 cups nsa chicken broth
- 1/8 tsp black pepper
- 1 tsp crushed red pepper flakes (if you don't like spicy, you may omit this)
In a large non-stick pot over medium heat, cook onions until translucent. Add the garlic and cook stirring for 1 minute. Stir in vinegar and sugar twin, bring to a simmer. Add cabbage and stir well to combine. Add pepper, tomatoes and chicken broth, bring to a simmer. Continue cooking at the simmer uncovered for 30-40 minutes. Taste soup and adjust the seasonings with vinegar, sugar twin and pepper adding more if desired. How would this turn out minus the sugar twin? I'm just not a fan of it and don't care for how stevia cooks, so I wonder if I leave it out all together, will it be greatly missed? I'm about sick as a dog, but I think I have all the stuff in the house to make this soup! And, it does sound yummy to me! Leslie

I think it would be fine, just less on the "sweet" side. Give it a try, you'll never know unless you do. Let us know how it works out!

I made this soup and it is quite delicious. I am not normally a big fan of cabbage soup, but this had enough tang to make it interesting. For my lunch, I added 2 oz. shrimp cut in half, and a half a cup of rice. So far, that has been my favorite meal! I'd like to add some mushrooms or chicken to it to make it a sort of hot and sour soup, Yummy! Melissa

I made this soup today with great results....LOVE IT! I added 2 oz of chicken breast and 1/2 c rice for lunch, yummy, yummy!
