    From member inthegroovetolose. Found this in a box of Uncle Ben's Converted rice. The only thing that didn't fit the plan was the salt. Made it with turkey breast cutlets the first time. Yum !!!!



    Combine garlic powder, marjoram, thyme, and pepper. Sprinkle over both sides of chicken breasts. Drain and coarsely chop tomatoes, reserving liquid. If necessary, add enough water to liquid to make 1½ cups. Combine tomato liquid and wine in a 10-inch skillet. Bring to a boil. Stir in onion and rice. Arrange chicken over rice, pressing down into rice. Arrange tomatoes over chicken. Cover tightly and simmer 20 minutes. Let stand covered until all liquid is absorbed, about 5 minutes.

    I love this recipe. However...

     I am having trouble getting the chicken cooked however. Are you sure 20 minutes is all that it takes? I have my electric cooktop set to medium and I am using thawed thin chicken breast strips. Tips, anyone?

     We're at a bit of a disadvantage in that the person who submitted this recipe has been absent from the forum for quite a time, so we can't turn to her for advice.  Looking at the recipe, one thing stands out.   There's no mention of browning the chicken before adding all the ingredients, which I find a bit odd.  Since you're already using thin chicken breast, it shouldn't take too long to cook, so perhaps quickly browning it after sprinkling with the seasonings may help the issue.
