    Diet Cola Chicken

    From member Heikeak This is another version of the 7-up Chicken recipe. It tastes like BBQd shredded chicken.


    I usually brown the chicken first in a non stick pan then transfer it into a larger pot and add the rest of the ingredients. Bring to a boil, reduce heat and let simmer until chicken falls apart (about 1 1/2 hours, the longer the better).

    You can serve this over rice or make your own French fries. This always makes me feel like I am having "junk food" without the guilt.
    Put as many free veggies in it as you like, the measurements are only a guideline!!
    You could also put everything in a slow cooker in the AM and have a delicious meal to come home to in the evening.


    Ketchup (Jeb43)


    Mix all ingredients together and simmer for 10 minutes. Set aside in container with lid and let cool. Store in refrigerator.

    Heikeak Note: you do not need to make the ketchup in advance for the dish, just add the ingredients. I also only use 1/2 of the vinegar. You can also cut out some of the Splenda. The coke seems to add enough sweetness.

    not bad. I followed the recipe to the "T" and it was a little too sweet for one of my kids. I will try it again without the added splenda in teh katsup and less vinegar too.

    I made this chicken for the first time last night. My family loved it. It is a little sweet, which really helps when you think you want to be bad but you want to stay on program. I recomened this recipe to everyone.

    My husband and I both loved this dish. The chicken was really moist. Instead of adding the ketchup, I just used a can of NSA stewed tomatoes.

    Just FYI... I found a really good substitute for the nsa tomato paste. My girlfriend turned me onto Tomato puree. It's with the stewed tomatotes and paste. It has way less sodium than anything else you can buy at a regular grocery store (Not regular: Whole Foods and Trader Joes). It has about 1% sodium for the entire can. It is sweet and ketchup consistency. If you use it in receipes, just use less water or vinegar so you don't water it down too much. Hope this helps!

    As with any other canned product, please be sure to check the ingredients (not the nutritional data) on any tomato puree to make sure it contains no added salt. This varies from manufacturer to manufacturer.

    I made this yesterday and tweaked it a bit (adding a little brown sugar sub., paprika and a splash of basalmic to zip it up) and it came out great!! I plan on having this tomorrow and will try w/pineapple for breakfast (never was a typical breakfast eater). I will let you know how it goes w/pineapple but I am sure this will be great on rice for pm snack dinner. (I am a B). Thanks for the easy recipe!!

    I made this recipe on Sunday. I also tweeked it to suite my taste. I added some extra garlic, a no salt creole seasoning that is popular here in New Orleans, a splash of balsamic vinegar and some red pepper flakes. I really like it served with rice for my lunch. Although I have to admit it is great by itself. I had it for my morning snack. I will definately make this again.

    LOVED this chicken dish! It got me started on the program and worked very well in the crockpot. I prepared the wild rice/mushroom casserole to serve the chicken on and it was perfect. Thanks for posting it!

    Wow!  This recipe is a sure-fire winner!  I made mine with diet Dr Pepper instead of cola, cause that's what I had on hand.  Worked fine.  I also added extra onion powder, a few drops of hot sauce and a teaspoon of dry mustard to counteract some of the sweetness.  Then dished it over a baked potato.  Had it again for lunch today.  This will be a staple for me from now on.  Thanks for the great recipe!

    Next time, you may wish to consider using Diet Rite or another diet drink with no sodium, since Diet Dr Pepper isn't really a recommended choice.  Smile

    Hi Gail:  Thanks for the reminder.  Unfortunately Diet Rite is pretty hard to find in my town.  I'm still looking for it.  Diet Dr. Pepper has only 35 mg sodium for an 8-oz serving, making a total of about 53 mg for the whole recipe.  I used 24 ounces of chicken, so once I divvy it up into 12 servings, that's less than 5 mg per serving from the soda.  Not zero, I agree, but the best I can do until I find Diet Rite.  Is 5 mg enough to cause problems?  Thanks again for keeping us all on the straight and narrow.
