    Rocco's Italian Scallops

    From member Rockn4u. I was playing around in the kitchen and came up with this. It tasted really, really good!


    • 5 oz scallops
    • 3/4 cup white wine
    • 1 clove garlic, minced
    • 1/4 cup fresh basil, chopped
    • 3 large or 5-6 small mushrooms, chopped
    • Mrs. Dash Herb & Garlic, to taste
    • black pepper, to taste
    • 1/4 tsp onion powder, or to taste
    • juice of one whole lemon

    In medium saucepan, pour wine and bring to a medium simmer. Add garlic, basil, mushrooms. Saute for 5 minutes. Squeeze lemon into pot, and then take the sharp edge of a knife and scrape some of the lemon pulp into the mixture as well. Add scallops, cook covered for 5 minutes, stirring occasionally.

    Just had this one for lunch. Very tasty. I didn't notice I was supposed to use onion powder, so I missed that, and I used use just a touch of a no-salt sundried tomato/basil/garlic powder a friend made, because I don't care for Mrs. Dash.

    Really enjoyed it and the kitchen still smells great! Thanks, Rocco!

    Yum! Yum! Yum! Yum! Yum!

    I treated myself to a bag of humongous sea scallops at the store the other day and was wondering other than the ceviche i plan to make this week what else i could do on plan with them..... stumbled across this recipe and decided to try it. I stuck with the programm but had no onion powder and so tossed in some nsa general seasoning i have and lots of black pepper. i also added some water to the pot and put in some rice pasta as it was all cooking down and covered it to let it simmer. that way i didn't have to dirty another pot.

    it's been about 2 hours since i had dinner and my mouth is still enjoying the flavours!

    I have always loved seafood, so this one was no surprise to me. I love fresh basil too so just a look at the ingredients here told me this could be a good one. Sure enough! Awesome!

    Cooked a large batch of this recipe tonight for my wife and myself using 20 oz. of scallops to ensure plenty of leftovers for tomorrow's meals. It was delicious!

    For this amount of scallops I doubled the amount of wine using 1 1/2 cups of Pinot Grigio, minced 6 cloves of garlic (we are both garlic lovers), doubled the fresh basil (1/2 cup), doubled the mushrooms (6 large chopped), doubled the onion powder (1/2 tsp), and kept the rest of the recipe as described. Served with browned rice and steamed broccoli.

    Might try it next time adding a splash of McCormick Imitation Butter Flavor. Yummmmm. Big Smile

    Verdict: Two Thumbs Up!!! YesYes
