    Quinoa Tabouli

    From member madrone26. This is a recipe for quinoa tabuli, I don't know where it came from, but it makes a lovely carb side dish, and very easy to prepare.

    • 1½ cups quinoa
    • (BMOS Note: Never heard of it, you say? Click here for information about this grain as well as a photo.)
    • 2 cups chopped tomatoes
    • 2 cups chopped Italian parsley
    • 1 cup chopped fresh mint
    • ½ cup chopped green onions
    • ½ cup lemon juice
    • ½ teaspoon cumin

    To minimize bitter taste, rinse and drain quinoa before use. Cook in 3 cups of water in rice cooker. Or alternately, place quinoa in saucepan with 3 cups water. Bring to a boil, reduce to simmer and cook 10 -15 minutes until water is absorbed and grains look translucent and have started to separate. Toss with remaining ingredients.

    The picture looks a lot like couscous and couscous is used to make tabouli....is it and is couscous plan friendly?

    Couscous is actually a very tiny pasta made of wheat. Wheat, as you know, is not recommended for use during the reduction phase-- thus the reason for this version of the recipe.

    Here is a picture of the Quinoa Tabouli that I made for my dinner tonight!  I loved it!  No doubt it will taste even better tomorrow!

    I included diced cucumber in mine and about half of the fresh chopped mint that the recipe called for (based on how I've made it in the past and knew I'd like it).  I kept the quinoa seperate from the other ingredients, mixed the veggies (onion, cucumber, parsley, mint, tomato, lemon, and cumin) all together and then measured out the quinoa into sandwich size baggies so I knew that I was getting the right amount of carb per serving.  I then added the veggies to each baggie and mixed well.  I love tabouli and I didn't miss the olive oil that is traditionally used at all!  Thank you for the recipe!
