I have been making a "pre 6wbmo" version of these for years that include canned biscuits, so these were a great alternative for me!!!
I have to say that I love these! This was my "first recipe" followed on the plan. I was concerned about them drying out without the fat content, so I added tomatoes and mushrooms to my sausage, onions, garlic and shredded potatoes. They were incredibly good! I love omelets and these were such a great alternative! I don't even miss the cheese and butter!
Thanks so much for posting this recipe! I'm not sure that I would have thought to do this without the biscuits.
Oh, and for those of you having problems getting them out of the muffin tins, just use a spoon as soon as they come out of the oven. Also, make sure not to overcook them, that also causes them to stick. The added water and moisture from the tomatoes and mushrooms (even though most of it cooked out in the pan with the sausage), really helps with getting them out of the tins as well.
Another thing: when you don't over cook them, or even under cook them just a tad, they re-heat better and you don't get rubbery eggs.
