Beef Stuffed Potatoes __________________________________________________________________________From member banegron. I made this last night, omitted the beef and added spinach and mushrooms to the ingredients, it was scrumptious!
- 8 ounces extra lean ground beef
- 4 large potatoes
- 1 onion, minced
- 2 garlic cloves, minced
- 1 sweet red pepper, minced
- ¼ cup minced fresh parsley
- 2 tablespoons nsa tomato paste
- ¼ teaspoon dry mustard
- ¼ teaspoon dried basil
- ¼ teaspoon dried thyme
- 1/8 teaspoon red pepper flakes
Questions about plan-friendly ingredients? Click here for information.Bake the potatoes at 375ºF for 1 hour, or until easily pierced with a fork. In a large nonstick frying pan over high heat, brown the beef for 5 minutes. Add the onions, garlic, peppers, parsley, mustard, basil, thyme and red pepper. Cook for 3 minutes. Reserve ½ cup. Cut a thin slice off the top of each potato. With a spoon, scoop out the insides, leaving a ¼"thick shell. Mash the scooped out potatoes and add to the beef mixture in the pan. Spoon the mixture into the shells, mounding it. Sprinkle with the reserved mixture. Reheat in the oven for 5 minutes.
Note: if you cut potatoes in half, each half should be approx. ½ cup carb and about 1-2 oz. beef per serving (the beef cooks down in weight after cooking)

Hi Natalie! Reheating foods (especially when freezing is involved) is no more my subject of expertise than crockpot cooking is. I'm the person who likes to make things fresh and tends to keep leftovers to a minimal, which I understand is NOT the ideal way to handle things on this plan. It's just that the idea of reheated baked potatoes conjures up a mental image of a soft, chewy and wizened looking specimen which once was a potato. In all honesty, if I had my choice, I'd likely prepare the filling and do the potatoes fresh-- but I understand that just isn't practical for a lot of people. I did some web surfing and found (as can always be predicted) that opinions are divided on the subject of how successfully one can reheat a baked potato. One source suggested soaking the whole, baked potato (this is presuming you haven't done the entire recipe, but have made the filling and prebaked the WHOLE potato without cutting into it) in water for a couple of minutes, then baking it on a pretty high heat for at least 20 minutes to reheat and hopefully crisp. Another source simply said stick the potato in the oven (not microwave, please) to reheat. Want to be a guinea pig and let us know how reheating goes? I wouldn't do it in microwave, nor would I wrap it in foil when reheating. If by some remote chance you have a toaster oven, that might be the way to go. Edited to add: I've sent a PM to the person who tried this recipe before you to see if we can get any first-hand experience on this.

OMG! These are delicious! I made them for dinner tonight, added cheese to the dh's and kiddos (of course not mine) and everyone loved them!
It doesn't say when to add the tomato paste, so I added it with the veggies. I also added some nsa chick broth to it with the potatoes so they would mash up better. I also 'eye balled' the spices and used some fresh basil that I had.
