I guess I missed that she said "I add" . I was thinking of doing the recipe the way it was written, then adding more egg white powder to double the amount of protein, so each muffin would be a complete breakfast.

Karen, I do add the powdered egg whites to mine and I do not notice a change in the taste or texture of my muffins. It does seem to increase the amount of batter I get. I have small muffin tins anyway and just divide the batter into 24 equall portions, using 2 muffins to equal my portion of protein and carb. I hope this helps.

THESE ARE GREAT!!! This is the first muffin recipe that I absolutely love! Well done! I must beat the eggs too much, since I wound up having to divide the batter up into 24 portions, but twice the muffins are great for me!

I don't mean to be rude or anything, but I realy didn't like this-not enough taste for me. Would it be OK if I doubled the syrup and added a little more splenda? That wouldn't mess them up would it?

With all due respect, I would be concerned that by adding further sweetener you may be triggering your sweet tooth (awakening The Monster, so to speak) making you crave even more sweet things. If you're trying to change your eating habits, adding more sweetener may not be in your best interests.

That is very true about the sweetner. I didn't think about that. My biggest problem is my sweet tooth. I guess I'll try some others with fruit or something. Thanks for writting back.

I really liked these. I made them last night and had one this morning before breakfast. Just to clarify. I am a type a woman, so I should eat one muffin and a hardboiled eggwhite for a complete breakfast??? Is that right?

Quick question................this sounds delicious however I know nothing about b aking so forive me if this is a stupid question. Can I just simply increase the liquid eggs instead of adding powdered eggs?

Sorry.  Have been out all day.  You do understand that the addition of dried egg whites wasn't mandatory, rather it was a method to even out portions.  You can make it as written and eat a bit of extra protein as another option.

If you do want to add more protein to the recipe, I've put in a message to Christine, the recipe's author, to see what she says about your question.  Originally she'd specified not to use pasteurized egg whites (liquid).  Not sure why.  Let's wait to hear further from her.

If you increase the amount of fresh eggs without adding any other dry ingredients you will end up with more of a custard than a muffin.  They are too wet for my liking but you may enjoy them.
Originally I had recommended against pasteurized whites because I could never get them to whip to stiff peaks.  Another user suggested bringing the eggs to room temperature before whipping them and that has worked for me but I measured incorrectly and achieved the custard type dish I mentioned.  Not my favorite dish but someone else may enjoy it.

I had to post again to say how much I LOVE this recipe. I have a bit of a sweet tooth from time to time and this satisfies it perfectly.

I have also made this recipe using the DaVinci sugar free peanut butter syrup instead of caramel and vanilla extract instead of almond and it is FANTASTIC. I love it both ways!

The first time I made them they tasted much "eggier" to me, but since I've started using my hand-mixer they taste much more like sweet bread. Perfect for a quick breakfast on the way to the gym before work. Big Smile

I just made these again after a year of not being on the plan. I LOVE THESE!!! I feel like I'm eating something I'm not suppose to be eating! The best part for me is that my 3 year old loves them too. I let him help me make them and he thinks they are such a treat. It feels good to have him eat something  so healthy. So much better than sugary cereals! That's what this plan is all about to me. Thanks again for this recipe!

Of course! Hopefully I have this right.

If I'm not going to work out right afterwards, I eat one plus a boiled egg white because there's only 1 oz. of protein in each muffin but 1/2 cup of carb. I'm body type C and get 2 oz of protein and 1/2 cup of carb for every meal evening snack.

These give me an incentive to work out after breakfast so I can have two! I love them.

    Hope this helps.

Brain damage?  Doubtful since you figured it out correctly.

PS Answer was also on the first page. Smile

okie i know i'm a pain in the rear..i dunno what i did the first time i made it...when i just made it..i dont believe i put the required 2 and a half cup because when i did put the 2 and a half it was filling the whole cup for my bullet...i didnt have steal cut oats..and still dont so i didnt have those...i dont think i whipped them enough i ended up with egg at the bottom of my first batch which was still find it tasted sweet...and the top was a fluffy oat bread like...well i put it in a small loaf pan...this time i had twice the amount...and had to put it in two...i added the powdered egg white suggested...in previous posts...no steal cut..so i'm thinking i've got extra protein?  now i'm just curious on how to serve this up..before i just had one pan...it said to serve 6 so i only got 5..i still lost though and that was important for me..so i'm curious if because i whipped itup more thats why theres more...or what..the only other extra i put was davinci..i put in the 1/4 cup..before i didnt..i just put in the splenda vanilla...and i used orange extract ...like i said it was great...enough for me to make again..and look forward to eating it..i'm just curious as to the second time around its wayyy different

let me know...i'm not a math genious...but i'm curious as to why i've got two pans...and its such a different between the first and second time..

i did have an added part from a reply..i cant find it now..i dunno i've read every reply to this post...and i cannot find it..the woman altered it...somehow i remember the temp was 350 for 30-35 minutes...and this one is 375 for 15...i dunno...i dunno what i've done...lol

Forgive me, but I've been home for less than 24 hours and am suffering from major jet lag, hence brain is not working even close to capacity.  I'm simply not following what is being asked here and I'm quite sure it's my current mental state.

Am I understanding that you're making this in a Magic Bullet?  Did you at some point actually fold in the dry ingredients?

If I'm reading this correctly (and I won't take bets on that) it appears you don't know how much carb or dried egg white was actually added to the recipe, which makes it impossible for me to advise you how to divvy up the results.  (Christine, recipe author) did advise on the previous page that using the dried egg whites seems to increase the volume of the results, so that part isn't apparently abnormal.)

I have to say to all that are sceptical....i had been looking for a simple "ready made" breakfast food on here because I don't like to have to make anything first thing in the morning.  I first found and tried the breakfast bars because I really wanted something that was already made and I could just grab and eat when I first got up.

This recipe is just that.  I have also found that I can change up the flavors with each batch.

I found they dont last real well so I only make half batches so its just under a week of food (or less if you use them for a lunch and/or dinner) but these are the best.

I have also been playing around with making a new version for a bun/break replacement that so far is good but want to try to get the protein amount down more so the "filling" can have a little more.
