WHAT IS IT?
Poultry with no added salt, salt water or
broth.
This plan
recommends the use of lean protein sources only. In terms of poultry, that translates to
skinless white meat only. Though
skinless and boneless chicken and turkey wing meat is also considered white
meat, it’s next to impossible to find this cut in a skinless and boneless
form. So for purposes of this plan, your
best choices are going to be skinless or boneless turkey breast or skinless and
boneless chicken breast meat.
Ground
chicken breast or ground turkey breast meat is also an excellent choice for dishes such as
meatballs, meat loaf, sausages, chili, burgers, Sloppy Joes, taco meat or
Shepherds Pie. Please note that products
labeled as simply ground turkey or ground chicken will contain dark meat and
higher fat content. For optimal results on this plan please make
sure the ground chicken and turkey products are specifically marked as breast
meat or all white meat. If you can’t
find these products pre-ground, it may be worthwhile to investigate purchasing a
meat grinder or meat grinder attachment if you own a stand
mixer.
SHOPPING TIP:
Please don’t run yourself ragged
searching all over town for chicken or turkey with 0 sodium content. It doesn’t exist. Chicken and turkey both contain natural
levels of sodium—and since your body needs some degree of sodium for proper
functioning of cells, natural sodium in your poultry is fine. What we’re looking to avoid is chicken or
turkey which contains added sources of salt--so be sure to read
ingredient labels, not the nutrition panels.
For some reason, some sectors of the poultry
industry have decided that injecting their product with salt water or broth
makes for a juicier bird— so be sure to be on the lookout for the addition of
either of these ingredients in the poultry you purchase—especially in frozen
chicken and turkey. If the label shows no added salt or broth, or
if it shows contents are chicken (or turkey) only, your product is nsa. (No salt added.)

WHOLE TURKEY OR CHICKEN. SKIN OFF OR ON?
Well… this is about the only time where we’ll bend
a little. If you’re roasting a whole
bird, go ahead and leave the skin on while it cooks if you want, with two
caveats: 1—Remove and discard skin on
your portion before eating, and 2—don’t eat anything that’s cooked in the bottom
of the pan, luxuriating in the drippings.
Any foods which have been at the bottom of the roasting pan have been
busily soaking up rendered fat from the bird’s skin and the additional drippings
from the Forbidden Dark Meat. Say no to
drippings, eat only the breast meat and remove the skin before digging
in.
And please
don’t use a whole chicken for anything made using a moist cooking method such as
crockpotting or stewing. Stewing in your
own juices sure isn’t good for you, nor is it good for your chicken if you’re
trying to watch your fat content. If
you’re going to crockpot or braise, please use skinless white meat
only.

WHAT ABOUT DELICATESSEN MEATS? MY STORE SELLS REDUCED SODIUM TURKEY BREAST!
Bad news, guys. Most of these products are very high in
sodium content—even the ones purported to be 30 or even 50% lower in salt still
contain far more added salt than we recommend using on this plan. When you consider that the sodium contained
in a 2 oz serving of deli turkey can be anywhere upward of 320 mg compared to a
mere 51 mg in a skinless, boneless turkey cutlet you cook yourself, it’s easy to
see why the premade product isn’t necessarily in your best interests. We have seen a limited number of delicatessen
turkey products which are specifically labeled no salt added and have sodium
content comparable to the skinless, boneless turkey cutlets mentioned here—so if
you happen upon one and you’re positive it meets plan standards, you’re welcome
to give it a test drive and see what you think.
You are forewarned however: you
may just decide you prefer cooking your own!
WHAT ABOUT TURKEY SAUSAGE AND TURKEY BACON?
For purposes of this plan, these products are
too processed, too high in sodium and in some cases also too high in fat. But don’t despair! Check our Breakfast Recipe Forum for suitable
