    Baked Spaghetti Casserole
    __________________________________________________________________________

    From member clearfam. I borrowed the idea of using zucchini as a substitute for pasta from my previous Atkins days and came up with a meat sauce recipe that fits this program to create this delicious main dish.


    Brown the first seven ingredients in a non-stick skillet. Add mushrooms, tomato sauce and water. Stir well. Simmer on low for about five minutes. Use a vegetable peeler or potato peeler to make thin strips out of the zucchini (discard seeds). These will resemble pasta. Add the zucchini strips to the meat sauce and transfer everything into a casserole baking dish. Bake at 350 for 30 minutes.

    I tried this last night with spaghetti squash and everyone loved it. It was much easier to because it is already like spaghetti.

    I loved this!  I didn't have zuccini or spagetti squash so I used rice noodles.  IT was exactly like spagetti with skinny noodles.  I will make this a LOT!

     This recipe was delicious, the whole family liked it. (Even youngest DS who doesn't like zucchini liked it).  The only thing I did differently was I baked it covered for 45 min. instead of 30 min. to make the "noodles" softer.  Thanks.

     I haven't tried any of the recipes on here yet. This one sounds really good! One question though, how do you measure portion sizes?

    I know this was originally posted in 2009 but I want to use the rice noodles instead of the zuccini as well.  I came up with 4 cups of cooked rice noodles and wanted to make sure that is correct. 

    1lb ground turkey=16oz

    2oz per serving=8 servings

    1/2 cup carb per serving=4 cups (right?)

     Your calculations are correct.  Smile

    The member who used rice noodles didn't state whether or not she used the firmer textured ones or not and I'm a bit leery about all varieties of rice pasta working effectively here.  But do report back and see how it goes for you!

    This is pretty good.  I used rice pasta (shells) instead of zucchini.  I didn't bake it be/c I thought it was good as is.  I found that the sauce was a bit bland and I think I will season the sauce (basically my OP Spaghetti sauce)before I mix it in the meat and rice pasta mixture.  I will definitely try this one again.

    Hi...I am new here (day 2) and found this recipe, so I tried it using the Rice Noodles. Well, I discovered the hard way I am not a fan of the Rice Noodles, BUT I had a great idea for the next batch.  I am going to make the "sauce" without Zucinni, Squash or Noodles and just do a side of Rice or Potatoes.  I might even mix them in, I'll have to see how it goes. 

    One tidbit, I did replace the Green Bell Pepper with Crushed Red Pepper Flakes and it gave it a very needed "kick".

    Thanks to the person who put this together....I surprised myself, for a change.

    While it's certainly possible that you simply don't like rice noodles of any kind, do realize that there is a wide variation from type to type and sometimes even between brands.   But then again, this recipe was intended for use with zucchini.

    Gail....I did get a speghetti squash to use, but I'd never cooked one before and it was getting too close to dinner time and I didn't want to experiment and it not be good and have to start over, so I tried an alternate method. As you see, it didn't work out so well, but because I like the sauce, I will DEFINATELY try again and do what it says.
