    I just finished having this for dinner.  Even DH really liked this & he's usually giving me a hard time about my on plan meals not being very tasty.  He liked it so much that he came back for seconds.  What I tho't was going to be a large batch for add'l meals for me is not the case.  I'll have to make another one just to have leftovers for other meals!  ABSOLUTELY DELICIOUS!  Yes

    Just a note on the substitutions I made:  I used a can of Rotel instead of just diced tomatoes & no sodium beef bouillon to make my broth.

     Dontcha love the way we swoop down on you when you use something which gives your food extra flavor? Please check your Rotel product.  Unless you've got something I haven't seen before, I don't believe they are plan friendly.  For example, though the can of Original I've got in my pantry claims to only contain less than 2% salt, the sodium content of the product is astronomical.

    I hope I'm wrong...

    I don't mind at all!  Honestly, I didn't even think to look at the contents of the Rotel.  I used it because I didn't have any other diced tomatoes in the pantry.  It never even occurred to me to check the sodium content but now that it's been brought to my attention, I've checked & you are absolutely correct.  It's WAY up there.  Might explain why the next morning my fingers felt swollen!

    I did make this recipe again, with NO SALT diced tomatoes!  It was still very good.  Next time I'll add some green chiles or peppers but I'm always thankful for the way you BMOS keep us on guard!
